I will admit to you that one of my favorite holidays of the entire year is the Fourth of July. It is a day where it's all kinds of acceptable to sit in your yard in cut offs, drinking Miller Lite. Who would want to give up this glorious tradition to slave away in the kitchen making sure everyone is fed? Unfortunately, as we get older, we think it's a good idea to try and impress our friends whether the party is at our place or not. Everything from a fancy cheese plate, to sparkly jello shots, I've done it all and let me tell you, it wasn't pretty..........
There has to be a happy medium right? I sure as hell do not want to be sweating in the kitchen making a flag shaped fruit plate while my friends are enjoying beer pong by the pool. But what do you do? I might not have all of the answers, but the following are a few easy ideas to bring to a poolside BBQ, while still wear cut offs and drinking a beer.
1. Spice Up Your Wine
One of the most delicious and refreshing things you can do on a hot summer day is shove a popsicle in your glass of wine or champagne. One of my favorite combos is:
1 Caribbean Fruit Floes from Trader Joes
1 glass of sparkling wine
Simply stick the popsicle upside down in your wine and let melt, or let the popsicle soak up the wine and enjoy!
2. Sangria On The Beach
This twist on a classic summer drink brings your Fourth of July festivities to the beach! Enjoy this Caribbean cocktail poolside and get ready for the Best.Day.Ever.
2 bottles of Moscato
20 oz can of crushed pineapple
1 1/2 up coconut rum
Combine all ingredients in large pitcher and stir to combine. Serve over ice!
3. Fancy Fruit Kebabs
Most people want something easy to eat that won't make them feel bloated while trying to look like Beyonce in a two piece. This means that watermelon should be your best friend for outdoor daytime parties. Here is one of THE EASIEST things you could make day of.
1 container of blueberries
1 package of wooden skewers
Cut watermelon with star shaped cookie cutter. Soak wooden skewers in water before sliding on the fruit. Arrange skewers with fruit on a large tray and enjoy!
4. Star Spangled Rice Krispies
These bad boys are the most addicting things on the planet. Have no fear, you will not be left with a tray of treats to derail you form your mid summer diet plans following the holiday.
1 batch of rice krispy treats
1 pack of white chocolate bark
red food coloring
blue food coloring
Melt the white chocolate and dye two separate batches with red then blue food coloring. Cut the rice krispies into squares and then dip one end into the chocolate and let harden. Sprinkle with star shaped candies or leave as is. Serve with skewers or striped straws!
5. Nacho Mama's Taco Salad:
1 pound ground beef (or vegetarian crumble)
3/4 cup water
1/4 cup salsa
1 envelope taco seasoning (or 2 TBSP of my DIY Taco Seasoning)
4-6 cups tortilla chips
4 cups shredded lettuce
1/2 cup pitted large olives, sliced lengthwise
2 cups shredded cheddar cheese
2-3 cups cherry tomatoes
In a large skillet, cook beef it is no longer pink. Drain off any extra grease. Next, stir in the water, salsa and taco seasoning. Bring to a simmer and cook uncovered for about 10 minutes. Spread beef evenly on the bottom of a 9x13 baking dish. Cover beef with layer of lettuce. Arrange olive slices in top left corder to form stars. For the stripes, alternate tomatoes and cheese. Add chips around the perimeter of the dish and serve!
There you have it! These recipes are tried and true and are certain to please any crowd. So make sure to do as your momma taught you and don't show up to your Fourth of July shindig empty handed. Party on people!
